Break an egg over the bowl, add a pinch of salt and whisk it. Put a slice of bread into the bowl and soak it from both sides until it is moist.
Place a medium-size skillet over low heat and put extra virgin olive oil and as soon as the oil gets slightly heated, put two slices of bread into the skillet and fry it from both sides until the color is slightly golden.
Put the bread on the plate, put minced mint leaves on top of a piece of toast and spread jelly over it.
