You can serve this dish for 4 people or two.
If you serve it for two than divide all the ingredients from 1 to 6 in equal amounts between two plates by spreading them separately around the plates.
In a bowl, mix the rest of the ingredients to create a smooth like consistency.
Sprinkle the avocado dressing over the plate and mix it with the vegetables and beans.
You can also serve it in an organic taco shell if you like, and sprinkle with shredded parmesan on top.
