Beets with Feta Cheese

Course Appetizer, Side Dish
Prep Time 5 minutes
Cook Time 17 minutes
Total Time 22 minutes

Ingredients

  • 2 onions chopped
  • 2 ½ cups of beets shredded
  • 2 ounces of Feta cheese cut into the small cubes
  • 8 halves of Walnuts crashed into the small pieces
  • Salt to taste
  • Black Pepper to taste
  • 5 cloves of garlic pressed or minced
  • 5 pieces of finely chopped figs or prunes, or dates, or apricots, or mix of them
  • Fresh rosemary leaves

Instructions

  1. Place a skillet on the stove over medium heat. Add extra virgin olive oil and put onions into the skillet.
  2. Sauté’ them until they have a slightly golden color.
  3. Add shredded beets to the onions, put a lid on, and let it sauté’ for 15-20 min until the beets are soft.
  4. Stir the mix every 5 min.
  5. 5 minutes before the dish is ready add garlic, feta cheese and figs.
  6. 2 minutes before the dish is completely ready add walnuts, salt, a pinch of black pepper, and rosemary leaves.

  7. Turn off the heat.

Recipe Notes

You can serve this dish in two ways:

1. As a side dish with some fish or meat;

2. Toast a slice of bread, cut it in half to create two small pieces of toast (to make it look elegant and not gigantic) and put the beets on top of the toast. Decorate it with a couple of fresh rosemary leaves and a pinch of the fresh walnuts or pine nuts.
