Mushroom Lentil Soup

Ingredients

  • 1.8 OZ of shitake mushrooms or your preference
  • 1/2 onion medium size
  • 1/2 cup of shredded carrots
  • 1/3 cup of lentils
  • ½ cup of the green beans chopped
  • 1 TBS Salt
  • Black pepper to taste
  • 1 tbsp Coconut Aminos Teriyaki sauce
  • 1/4 cup of parsley
  • 8 cloves of garlic
  • 1 bay leaf
  • 8 cherry tomatoes cut in halves

Instructions

  1. Finely chop onion and mushrooms.

    Set a medium-size skillet on the stove and add some olive oil (extra virgin). Use a medium heat to avoid a smoking point. Place chopped onions and shredded carrots in the pan and sauté them until golden.

    Place the mushrooms in the pan and stir it with the onions and carrots. Sauté until mushrooms are almost ready.

    In a medium-size saucepan add 4 cups of water. When the water reaches a rapid boil, turn the heat to the medium and add lentils, green beans, and a bay leaf into the water.

    When the vegetables are ready, place them into the saucepan and cook until the green beans and lentils are tender.Approximately 15 min.

    Add 1 tbsp or as needed of salt and CoconutAminos Teriyaki sauce. Press garlic into the saucepan add cherry tomatoes and stir it. Cook for 3 more min and then turn off the heat.
