Banana Muffins (Sugar Free, Gluten Free)

Ingredients

  • 4 ripened bananas
  • 4 eggs
  • ½ cup of extra virgin coconut oil
  • ¼ cup of coconut flour
  • ¼ tsp of salt
  • 1 tsp of cinnamon
  • 1 tsp of vanilla
  • 1 tsp of baking soda
  • ½ cup of dry sweetened cranberries optional

Instructions

  1. Combine first 8 ingredients in the bowl, mix well using a mixer.
  2. Add cranberries into the bowl and mix all together using a spoon.
  3. Spray extra virgin olive oil over a muffin pan and scoop mixture into muffin pan.
  4. Bake muffins for 25 min at 350F.
