Green Salad with Beets, Feta Cheese and Avocado (optional)

Ingredients

  • ¼ cup of sliced cooked beets
  • 2 cups of mix of fresh green leaves
  • 2 tbsp of feta cheese cut into small cubes
  • 5 cherry tomatoes cut in halves
  • 5 green or black olives cut in halves
  • Half of an avocado sliced
  • 5 slices of cucumber
  • 1 tbsp of dry sweetened cranberries
  • 1 tsp of Pumpkin seeds
  • 1 tbsp of either cashew or pecans
  • Extra virgin olive oil to taste
  • Aged balsamic to taste

Instructions

  1. Place green leaves into a salad bowl. Add the rest of the ingredients to the bowl.
  2. Slightly mix them and sprinkle with olive oil and balsamic.
