Bean Dip with Avocado and Vegetables

Course Appetizer
Total Time 10 minutes

Ingredients

  • 1 cup of cooked cannellini beans
  • 1/2 of a bell pepper
  • 1 tomato or 12 cherry tomatoes
  • 4 gloves of garlic
  • 1 avocado
  • ¾ cup of chopped cilantro
  • 1/2 of a lemon
  • Salt to taste
  • 1 tbsp of Coconut Aminos Teriyaki sauce

Instructions

  1. Combine all the ingredients except lemon in a Vitamix.

    Squeeze lemon juice over and put the lid on. 

    Blend the ingredients until the consistency is smooth.


Recipe Notes

Serve it with slices of cucumbers or fresh cherry tomatoes.

You can also serve it with organic chips.
