Sweet Potato Brownie

Ingredients

  • ½ cup of extra virgin coconut oil
  • 1 ½ cup of mash sweet potato
  • 1/3 cup of maple or date sugar optional
  • 4 eggs
  • ¾ cups of an apple sauce 1 apple grated in Vitamix
  • 1 tsp of vanilla extract
  • ¼ cup of coconut flour
  • 2 tbsp of arrowroot flour
  • ½ cup of cacao powder
  • ½ tsp of sea salt
  • 1 tsp of baking soda

Ingredients for the brownie toping layer:

  • 2 tbsp of peanut butter or almond butter
  • 1 tbsp of maple syrup
  • ½ tbsp of cacao powder

Instructions

  1. Combine all the ingredients (except the ingredients for the brownie toping layer) in a bowl and mix well until smooth.

    Put a parchment paper into a baking pan (size 8x8) andtransport the mixture into the baking pan.

    Bake it for 25 min at 375F.

    While baking the brownie, mix well the ingredients for thetop layer in a bowl until smooth.

Recipe Notes

When brownie is ready, let it cool and spread the top layer mixture over the brownie.

Cut the brownie into 8 equal pieces.
