Split Pea Soup with Spicy Smoked Sausages

Ingredients

  • 1 cup of dry yellow split peas
  • 1 regular potato
  • 1 cup of shredded carrots
  • 1 average size onion finely chopped
  • 2 organic Applegate Andouille sausages or any smoked sausages you prefer cut into small pieces
  • 2 tbsp of organic ketchup
  • ¼ cup of minced parsley
  • Salt and black pepper to taste
  • 2 bay leaves
  • 6 cloves of fresh pressed garlic

Instructions

  1. Place a saucepan on the stove over high heat. Add 64 ounces of water and bring to a boil. Add 64 ounces of water and bring to a boil. Add potatoes in 15 min. 

    While the peas are being cooked, place a skillet on the stove over medium heat and put extra virgin olive oil into the skillet. Add onions, carrots and sausages and sauté them until they have a slightly golden color, stir occasionally. Add garlic and ketchup into the skillet and sauté for 5 more min. Place this mixture into the saucepan and mix it together. Add salt, black pepper and bay leaves. Cook until potatoes and peas are tender. 

    Add parsley 3 minutes before you turn off the heat, and soup is ready.
