Cottage Cheese Pancakes

Ingredients

  • 8 oz of cottage cheese
  • ¼ cup of raisins
  • 1 egg
  • 2 tbsp of arrowroot flour
  • 2 tbsp of sugar optional

Instructions

  1. Put all the ingredients into the bowl and mix them together. Place the skillet on the stove over medium heat. Put extra virgin olive oil into the skillet. Use a tablespoon to make the pancakes. Cook until each side has slightly golden color.

Recipe Notes

Serve the pancakes with berries or maple syrup mixed with sour cream.
