Potato Pancakes from my Granny

I obtained this recipe from my dear grandmother. She was originally from Poland.

It was the most favorite meal in our family. Easy to make, healthy, vegetarian, and you can serve it as a side dish as well.

Potato Pancakes from my Granny

Course Appetizer, Breakfast, Side Dish
Cook Time 18 minutes
Servings 3 portions

Ingredients

  • 1 cup of shredded sweet potato
  • 1 cup of shredded regular potato
  • 1/4 finely chopped onion
  • 1 egg
  • 4 tbsp of arrowroot flour
  • Salt to taste

Instructions

  1. Mix well all the ingredients in the bowl.
  2. Place skillet on the stove over medium heat. Add extra virgin olive oil to it.
  3. Use a tablespoon per each pancake while placing the mixture on the skillet.
  4. Cook the pancakes until each side has a slightly golden color.

Recipe Notes

I like eating it with coconut kefir or sour cream. Just put a spoon of any sauce on top of a pancake and enjoy the taste!
