Stuffed Chicken Thighs with Mushrooms and White Wine Sauce

Ingredients

  • 1 onion finely chopped
  • 8 oz of sliced white mushrooms or shitake mushrooms
  • 10 pieces of organic chicken thighs
  • 1 ½ cups of wine
  • 3 tbsp of organic olive oil mayonnaise
  • 12 cloves of fresh garlic pressed or minced
  • 1 tbsp of Coconut AminosTeriyaki sauce
  • Salt and black pepper to taste
  • Mix of Italian herbs to taste
  • 2 tbsp of shredded parmesan cheese

Instructions

  1. Stuffing preparation (12 min):

    Place a medium-size skillet on the stove over medium heat. Add extra virgin olive oil and onions.

    As soon as onions get tender add mushrooms and sauté’ until the mushrooms are ready. Add salt to taste. Stir this mix occasionally. Turn the heat off when it is ready. Add shredded parmesan to this stuffing and mix it all together.

  2. Stuffing process and cooking (5-7 min):

    Put 1 tbsp or more (depends on the size of the thighs) of the stuffing on the inner side of the thigh and fold it down.Secure both sides with the toothpick, by pushing the toothpick through the end of the sides. Transport each thigh into the baking pan.

  3. Sauce preparation (3 min)

    Mix wine, mayonnaise, garlic, Coconut AminosTeriyaki sauce, salt and pepper and Italian herbs altogether.

  4. Final step:

    Pour the sauce over the thighs and put it into the oven. Bake it at 400F temperature for 40 min.

    Ten min before it is ready, take the pan out of the oven and sprinkle each piece of the thighs with shredded parmesan cheese. Bake for 10 more min.

    Turn off the oven when the chicken is ready.
