Baked Pumpkin with Italian Herbs

Ingredients

  • 2 pounds of pumpkin cut into big pieces
  • Salt to taste
  • 2 tbsp of Italian herbs mix
  • 3 tbsp of Extra virgin olive oil
  • Shredded Parmesan cheese to taste

Instructions

  1. Place large pieces of pumpkin into the baking pan.

    Sprinkle Italian herbs and salt to your taste over pumpkin pieces.

    Apply ingredients with your hand to make sure it is covered evenly.

    Sprinkle parmesan cheese on top of each piece.

    Bake for 30 minutes at 350° until the pumpkin pieces are approximately 90% tender.

You can serve it as a side dish with your entrees or for your breakfast with the eggs.
