Salmon Fish Cakes

Ingredients

Groundfish preparation:

  • 1.2 Lb of raw salmon
  • 1 medium size finely chopped onion
  • 6 dry prunes or figs, or mix of those
  • 1/2 of a bell pepper finely chopped
  • 1 cup of fresh parsley
  • Salt and black pepper to taste
  • 2 tbsp of arrowroot flour

Sauce:

  • 1 tbsp of organic olive oil mayonnaise
  • 1 tbsp of yellow mustard
  • 2 tbsp of Coconut Aminos Teriyaki sauce
  • 1/2 lemon

Instructions

  1. Grind the raw fish with onions, figs, bell pepper and parsley, using a meat grinder.

    Add salt and pepper to taste and arrowroot flour. Mix well.

    Shape this mixture into patties (about 12-14) and put them into the baking pan.

    Mix all the ingredients for the sauce in the bowl and pour them over the patties.

    Cover the baking pan with aluminum foil and put it into the oven. Bake them for 20 min at 350 F.

    Take the aluminum foil off in 20 min and continue to bake them until the top of fish cakes has slightly golden color.
