Indian Spiced Chickpeas with Tomatoes

Ingredients

  • 3 tsp of cumin powder
  • 1 cup of chopped onion
  • 2 cups of crushed tomatoes
  • 1 tbsp of minced jalapeno pepper
  • 1 tbsp of fresh pressed garlic
  • ½ tsp of grated ginger
  • 2 tbsp of water
  • 2 cups of cooked chickpeas
  • 1 tsp of garam marsala powder
  • 1 tsp of coriander powder
  • ½ tsp of red chili pepper flakes
  • Salt to taste
  • ½ cup of chopped cilantro

Instructions

  1. Place a medium size skillet on the stove over medium heat. Add olive oil, 2 tsp of cumin and onions. Sauté for 3 min.

    Add tomatoes, jalapeno pepper, garlic, ginger and water and sauté until all the vegetables are tender. Add chickpeas, garam marsala, cumin, coriander and red chili pepper. Mix it together and sauté for 10 more minutes.

    You can serve it on a piece of lettuce warm or cold or just like a side dish.
