Fried Sweet Potatoes with Mushrooms

Ingredients

  • 1 big size sweet potato chopped into the small cubes
  • 1 medium-size onion chopped fine
  • 8 oz of Shitake mushrooms or any other mushroom that you prefer
  • 3 fresh pressed cloves of garlic
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place a skillet on the stove over medium heat. Put extra virgin olive oil and onions.

    Sauté’ them until onions have slightly golden color. Stir them occasionally.

    Add mushrooms and sauté’ them with onions until mushrooms are tender.

    Add potatoes, stir all the ingredients together and cook it.

    Stir it every 5-7 min. Add salt and black pepper 5 min before it is ready.

    When it is ready, turn off heat.
