Ingredients

  1. 3 organic chicken breasts
  2. 2 egg whites
  3. 2 cups of gluten free organic crumbs
  4. Italian spices to taste
  5. Salt and black pepper to taste
  6. 1 Jar of Organic Ville Gluten Free Marinara sauce
  7. 8 Oz of Shredded Low-moisture Part skim Mozzarella cheese

Directions

Whisk egg whites in a bowl. Mix bread crumbs with Italian herbs and salt in a separate bowl. Put the chicken breasts on a cutting board and cut each lengthwise to get 6 pieces of chicken breasts. Sprinkle the bottom of a baking sheet with olive oil. Take a piece of breast, dip in eggs and then in bread crumbs and  transport into the baking sheet. Repeat this with 6 pieces. Put it into the oven and bake at 450F until chicken has slightly golden color but no more than 15 min.

Sauce preparation:

In a bowl, mix marinara sauce and coconut aminos teriyaki sauce. Add salt and Italian spices to taste. Pour this sauce over the chicken breasts. Sprinkle with mozzarella cheese on top.

Put into the oven and cook for approximately 15-20 minutes or until cheese is melted and has a slightly brown color.

I also would like to share an authentic recipe of Chicken Parmesan which was shared by my dear friend Marc Datelle whose grandma was Italian and passed this recipe of Chicken Parmesan through generations 🙂

Ingredients:

  1. 6 organic chicken breasts
  2. 4 eggs
  3. 2 cups of organic bread crumbs
  4. 1 tbsp of oregano
  5. 6 fresh basil leaves
  6. ½ tbsp of garlic powder
  7. 3-4 garlic cloves chopped
  8. Extra virgin olive oil
  9. 1 Jar of La Famiglia del Grosso Basil tomato marinara sauce
  10. 16 oz of Crave Brothers Fresh Mozzarella cheese sliced into 12 pieces

Break four eggs in a bowl and whisk them. Mix bread crumbs with dry garlic and Italian herbs in a separate bowl. Put the chicken breasts on a cutting board, sprinkle with salt, pepper and pound them until they are soft and thin. Place skillet on the stove over medium heat, add extra virgin olive oil and chopped garlic. Take a breast, dip into egg mixture and then in bread crumbs. Transport into the skillet and fry until it has a slightly golden color. Remove from the skillet and let them drain on paper towel. Cover the bottom of a baking sheet with a thin layer of marinara sauce. Put the chicken breasts on top. Place basil leaves around the baking sheet and pour the rest of the sauce over the chicken breasts. Put two pieces of Mozzarella  on top of each chicken breasts. Put into the oven for 25-30 min at 325F and cook until the cheese is melted and chicken is nearly done.
