Salmon with Mushrooms, Broccoli and Cranberries in Coconut Milk Gravy

Ingredients

  • 10 oz of raw salmon about three portions pieces
  • 1 cup of semicircle sliced onions
  • 4 oz of sliced white mushrooms or any mushrooms you prefer
  • 1 cup of broccoli florets
  • ¾ cup of coconut milk or any type of milk you prefer
  • ¼ cup of Coconut Aminos Teriyaki sauce
  • 1 tbsp of fresh squeezed lemon juice
  • ¼ cup of dried sweetened cranberries
  • Salt and pepper to taste
  • 1 tsp of arrowroot flour

Instructions

  1. Place the skillet on the stove over medium heat. Add extra virgin olive oil, onions and mushrooms.

    Cook until the onions and mushrooms have slightly golden color. 

    Add fish to the skillet and sprinkle salt and pepper over the skillet.

    Pour lemon juice over the dish and cover.

    Sauté until the fish is ready (about 10-12min), check occasionally.

    Add broccoli florets and cranberries, pour coconut milk on top and sprinkle arrowroot flour.

    Mix it together carefully around the fish pieces, cook until the gravy gets slightly thick.

    Add more salt and pepper to taste. Approximately 5 more min.
