Beans with Vegetables and Avocado Dressing

Course Appetizer, Salad
Total Time 20 minutes

Ingredients

  • ½ cup of bell pepper finely chopped
  • ½ cup of cucumber finely chopped
  • 1 cup of parsley
  • ½ cup of cherry tomatoes cut in halves
  • 1 cup of cooked black beans
  • ½ cup of cooked cannellini beans
  • 8 Taco shells
  • Shredded cheese if you serve it in taco shell

Avocado dressing ingredients:

  • ½ of avocado
  • 3 oz of plain Greek yogurt
  • 2 tbsp of Coconut Aminos Teriyaki sauce
  • 1 tsp of fresh pressed garlic
  • Salt to taste

Instructions

  1. You can serve this dish for 4 people or two.

    If you serve it for two than divide all the ingredients from 1 to 6 in equal amounts between two plates by spreading them separately around the plates.

    In a bowl, mix the rest of the ingredients to create a smooth like consistency.

    Sprinkle the avocado dressing over the plate and mix it with the vegetables and beans.

    You can also serve it in an organic taco shell if you like, and sprinkle with shredded parmesan on top.
