Mozzarella Salad with Olives and Avocado

Servings 2 portions

Ingredients

  • 3-4 cherry tomatoes cut in halves
  • ¼ cup of chopped mozzarella cheese
  • 3-4 olives cut in halves
  • Fresh basil leaves to taste
  • Salt to taste
  • Extra virgin olive oil to taste
  • Balsamic vinegar to taste
  • 2 halves of avocado

Instructions

  1. In a bowl, mix tomatoes, mozzarella cheese, olives, basil leaves and salt.

    Add olive oil and balsamic.

    Take half of an avocado and scrape approximately half of the avocado flesh out (you can use it for your breakfast toast or any salad).

    Fill the half of an avocado with mozzarella salad that we created.

    Repeat the same process with the other half.
