Omelet with Baked Turkey or Bacon

Ingredients

  • 2 slices of baked turkey or bacon chopped fine
  • 1 tbsp of bell pepper chopped fine
  • 1 cup of mix green leaves or spinach
  • 4 cherry tomatoes cut in halves
  • 1 tbsp of fresh minced cilantro or parsley
  • 3 whole eggs whisked or 4 egg whites
  • Salt to taste
  • 1 tbsp of shredded mozzarella or parmesan cheese

Instructions

  1. Place a skillet on the stove over low heat. 

    Add extra virgin oil and put the bell pepper and turkey (or bacon) into the skillet. 

    Sauté’ them until slightly tender. 

    Add tomatoes and green leaves to the skillet and sauté’ until the green leaves collapse. 

    Pour the eggs on top of this mix, add salt and cook it until it is ready. When it is ready sprinkle the cheese over the omelet.

Recipe Notes

When you serve it on the plate fold the omelet in half and sprinkle fresh cilantro or parsley on top of the omelet.
