Salmon Sockeye Fillet

Ingredients

  • 3.5 oz of salmon sockeye fillet cut into 4 pieces
  • 3 tbsp of extra virgin olive oil
  • ½ tbsp of squeezed fresh lemon juice
  • 8 cherry tomatoes cut in halves
  • ¼ cup of Capers
  • Mix of fresh Italian herbs Rosemary, thyme, oregano
  • Salt and black pepper to taste

Instructions

  1. Place olive oil, lemon juice, salt, pepper and Italian herbs into a medium size bowl and mix well. 

    Add Salmon to the mixture, cover salmon using hands. Mix well.

    Place parchment paper on the bottom of a baking pan and transport the salmon into the baking pan. 

    Add the tomatoes on top of the fish and sprinkle it with the capers. C

    over the top of the baking pan with the parchment paper and put it into the oven to bake at 350F for 20-30 min.
