Quinoa Salad with Fresh Vegetables, Avocado and Spinach

Course Salad
Total Time 15 minutes
Servings 3 - 4 portions

Ingredients

  • 1 cup of cooked quinoa
  • 5 olives each olive is cut into 4 cubes
  • ¼ cup of chopped bell pepper
  • 1 cup of sliced cucumbers
  • 1/3 cup of cherry tomatoes each tomato is cut in 4 cubes
  • 1 tbsp of mixed pine and pumpkin seeds
  • 1/3 cup of minced cilantro
  • 1 cup of fresh spinach leaves or any greens you prefer
  • 1 avocado cut into small cubes
  • ¼ cup of Feta cheese cut into small cubes
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of Coconut Aminos Teriyaki sauce

Instructions

  1. Combine all the ingredients (except Feta cheese, extra virgin olive oil and Coconut Aminos Teriyaki sauce) in a bowl.

    Add extra virgin olive oil and Coconut Aminos Teriyaki sauce. Mix well.

Recipe Notes

Sprinkle with Fetta cheese when you serve this salad in abowl.
