Salmon and Avocado Lettuce Wraps

Course Appetizer
Prep Time 12 minutes
Servings 4 wraps

Ingredients

  • 6 OZ Can of Skinless & boneless Alaskan pink salmon
  • 1/2 avocado chopped
  • 1/2 pepper finely chopped
  • ¼ cup of fresh minced cilantro
  • 1 tsp of fresh squeezed lemon juice
  • 1 tbsp of organic olive oil mayonnaise
  • 1 tbsp of Coconut Aminos Teriyaki sauce
  • Salt to taste
  • 4-5 lettuce leaves
  • ¼ cup of cooked organic black beans
  • 1 Tbsp of organic capers

Instructions

  1. Place salmon into a bowl. Mash it with a fork. Add the rest of the ingredients except the lettuce leaves, and mix well.

    Scoop mixture into the center of each leaf.

Recipe Notes

Sprinkle with black beans if you like. You can also serve this salad on a slice of a cucumber.
