Banana Pancakes with Peanut Butter and Oats

Course Breakfast
Total Time 15 minutes
Servings 25 pancakes

Ingredients

  • 2 bananas
  • 2 eggs
  • 2 tbsp of peanut butter
  • ¼ cup of organic oats
  • 1 tsp of vanilla extract
  • Salt to taste
  • Cinnamon to taste
  • 1 tbsp of raw organic honey optional

Instructions

  1. Blend all the ingredients in a Vitamix.

    Place a skillet over low medium heat.

    Add extra virgin olive oil.

    Scoop about a tablespoon on the heated skillet for each pancake.

    Cook until each side is slightly brown.

    Serve pancakes with strawberries, blueberries and a bit of honey sprinkle on top.
