Gluten Free Eggplant Parmesan with Egg Whites

Ingredients

  • 7 slices of an eggplant sliced lengthwise
  • Gluten free pinko flakes seasoned or any gluten free crumbs
  • 12 oz or 1 1/2 cup of Gluten free tomato basil marinara
  • 2 organic egg whites
  • 7 slices of Fresh mozzarella cheese Crave Brothers Brand
  • Salt to taste
  • Fresh or dry basil to taste
  • 3 tbsp of Coconut Aminos Teriyaki sauce

Instructions

  1. Dip the eggplants slices into the egg whites and then in gluten free flakes. Place the eggplants slices on the baking sheet. Cover with marinara sauce, sprinkle with basil and put the cheese slices on top. Sprinkle with salt and Coconut Aminos Teriyaki sauce.

    Bake it in the oven for 30-40 min at 359 F.
