Eggplant with Pecorino Toscano Cheese from Miss Linda

Ingredients

  • 1 average size eggplant chopped into bitesize pieces
  • 1 cup of chopped onion
  • 1 cup of tomatoes chopped
  • 1 cup of fresh basil leaves
  • 4 gloves of fresh squeezed garlic
  • Pecorino Toscano cheese shredded to taste
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place a skillet on the stove over medium heat. Add extra virgin olive oil, onions and eggplant. Sauté until the vegetables have a slightly brown color, stir occasionally. Add tomatoes to the skillet and continue to cook for 5 minutes. Add basil leaves, salt, garlic, black pepper. Mix all ingredients and sprinkle Pecorino Toscano cheese on top. Turn off the heat.
