Banana Muffins with Egg Whites and Gluten Free Oat Bran

Ingredients

  • 3 bananas
  • 3 egg whites
  • 1/3 cup of oat bran
  • 1/2 cup of organic virgin coconut oil
  • 1 tsp of baking soda
  • 1 tsp of vanilla
  • Salt to taste
  • Cinnamon to taste
  • 2/3 cup of cranberries

Instructions

  1. Combine all the ingredients in a large bowl and mix until smooth, add cranberries. Coat muffin pan with non-stick extra virgin olive oil, or use paper liners and scoop the mix into muffin pan. Preheat oven to 350 degrees F (175 degrees C). Bake in preheated oven for 25 min.
