Keto and Paleo Friendly Pancake with Salmon, Avocado and Fried Egg with Runny Yolk

Ingredients

  • 1/4 cup of almond flour
  • 1/4 cup of organic coconut flour
  • 1 tbsp of Organic virgin coconut oil
  • Sea salt to taste
  • 1/2 tsp of Baking soda
  • 1 tbsp of gluten free gum free not xanthan not guar baking binder
  • 1 tbsp of Coconut aminos teriyaki sauce
  • 2 egg whites
  • 1 tbsp of organic grass-fed Ghee or any butter you prefer. Try to avoid vegetable oils for cooking on the stove.
  • 1 sliced avocado
  • 6-8 slices of smoked wild salmon
  • Balsamic vinegar optional
  • 2 eggs

Instructions

  1. Mix all the ingredients, except the ghee butter, avocado, salmon and balsamic in a bowl. Place a skillet on the stove over a medium heat. Add ghee. Make two pancakes out of mixture that we created and fry them from both sides until slightly brown. Make two fried eggs with the runny yolk in a separate skillet. 

    Transport pancakes into the plate and top with sliced avocado pieces and salmon over the avocado layer. Take the fried egg and carefully place it on top of salmon. Garnish with herbs like parsley or cilantro, or either one you like. Sprinkle with balsamic vinegar if you prefer.
