Zucchini Pancakes with Oat Bran

Ingredients

  • 1 Zucchini shredded about 2 cups
  • 2 egg whites
  • 1/3 cup of gluten free oat bran
  • 1 tsp of baking binder - gum free gluten free (optional ingredient)
  • Salt to taste
  • Garlic powder to taste

Instructions

  1. Mix all the ingredients in a bowl.

    Place the skillet in the stove over medium heat. Add extra virgin olive oil and scoop the mix with a tbsp for each pancake into the skillet. Cook them until each side is slightly brown.
