Arugula Salad with Beets and Artichokes

Ingredients

  • 2 cups of arugula
  • 1 cup of half cooked green beans
  • 3/4 cups of raw chopped asparagus
  • 1 cup of sliced beets
  • 5 oz of marinated artichoke heart
  • Half of a bell pepper chopped
  • 3 oz of crashed feta cheese
  • Extra virgin Olive oil to taste
  • Balsamic vinegar aged
  • Toasted sliced almonds and pumpkin seeds

Instructions

  1. In a bowl, mix all the ingredients and drizzle olive oil and balsamic vinegar over the salad.
